Recipe for a really ripping lentil soup

– one medium onion, chopped

– two tablespoons of vegetable oil

– one clove of garlic, crushed

– one cup of carrots, chopped

– two sticks of celery, chopped

– half a cup of lentils

– one bay leaf

– one tablespoon of freshly chopped parsley

– salt and freshly ground pepper to taste

– two and a quarter cups of vegetable stock or water

Heat a large sauce pan with vegetable oil. Add garlic and onions with a dash of water, heat until translucent. Add celery and carrots and heat for another 5 minutes until soft, adding salt and pepper to taste. Add vegetable stock until ingredients are mixed; next add lentils and bay leaf. Bring soup to a boil, then immediately reduce heat, cover pan and let simmer for approximately 20 minutes. Remove bay leaf and add additional salt and pepper. Finally add parsley before serving.
